A
guarantee of ageing
Although, legally speaking, a sparkling wine may be called a "cava"
after only nine months, ageing, a true quality product needs more time.
Thus, our Reserva cavas are thus aged for a minimum of two years, and
our Gran Reservas for three.
A guarantee
of the traditional winemaker's craft
One by one, each bottle of Montesquius cava is turned by hand. For us,
no machine can replace the ability and precision of our master winemakers.
A guarantee
of low-pressure grape juice extraction
A good cava depends on a number of factors, such as length of ageing,
expert knowledge and proper use of modern technology. All these are of
little use, however, without a quality raw material: the grape juice used
in our cava is extracted at a pressure of only 0.3 atmospheres, thus ensuring
the finest flavour and aroma.
